Ingredients

  • To make the filling:
  • 8 spring roll wrappers made from rice paper
  • 1 cup cooked and chilled vermicelli rice noodles
  • 1 cup shredded lettuce 
  • 1 cup julienned, carrots
  • 1 cup cucumber,  julienned
  • 1/2 cup julienned red bell pepper
  • 1/4 cup mint leaves, fresh
  • 1/4 cup cilantro leaves, fresh
  • To make the Dipping Sauce:
  • 2 tbsp of soy sauce
  • 1 teaspoon hoisin sauce
  • 1 teaspoon lime juice
  • 1 tbsp sesame oil
  • 1 tablespoon sugar
  • 1 minced garlic clove

Instructions:

1. Gather your ingredients:


● Cook the rice noodles as directed on the packet. Set aside and rinse with cold water.
● Prepare all of the veggies and herbs as directed in the recipe.

2. Make your dipping sauce:

● Whisk together the soy sauce, hoisin sauce, lime juice, sesame oil, sugar, and chopped garlic in a small bowl.

● Make a note of it.

3. Making the Rice Paper Wrappers Soft:

 ● Warm water should be poured into a big shallow dish.

●  Dip one rice paper wrapper in the water for 5-10 seconds, or until flexible but still somewhat hard.

4. Put together the Spring Rolls:

● On a clean surface, place the softened rice paper.
● Place a tiny handful of cooked rice noodles down one edge of the wrapper, followed by lettuce, carrots, cucumber, bell pepper, mint leaves, and cilantro.

5. Spring Rolls:

● Fold the rice paper sides over the filling, then roll firmly from bottom to top, sealing the edges.


6. Reiterate:

● Repeat until all of the ingredients have been utilized.

7. Serve:

● Serve the spring rolls with the dipping sauce on the side right away.
