Ingredients

  • For the vegetarian patties:
  • 2 cups cooked black beans, drained and mashed.
  • 1 cup cooked quinoa.
  • 1/2 cup breadcrumbs.
  • 1/4 cup finely diced onion
  • 1/4 cup shredded carrot.
  • 2 garlic cloves, minced
  • 1 teaspoon cumin.
  • 1 teaspoon of paprika.
  • Add salt and pepper to taste.
  • 2 tablespoons olive oil.
  • For Burger Assembly:
  • 3 whole wheat hamburger buns.
  • 3 slices of your preferred cheese (cheddar or Swiss work nicely)
  • lettuce leaves
  • Tomato slices
  • Red onion slices.
  • Pickles
  • Mustard and ketchup for condiments.

Instructions:

1. Combine the mashed black beans, cooked quinoa, breadcrumbs, chopped onion, shredded carrot, minced garlic, cumin, paprika, salt, and pepper in a large mixing bowl. Mix until well mixed.

2. Divide the ingredients into three equal pieces, shaping each into a patty.


3. In a medium-sized pan, heat the olive oil. Cook the vegetable patties for 4-5 minutes per side, or until golden brown and cooked through.

4. Toast the burger buns in a toaster or griddle for a minute, until lightly toasted.

5. Assemble the burgers by placing a vegetable patty on the bottom half of each bun. Top with a piece of cheese while the burger is hot, allowing it to melt slightly.

6. Add lettuce leaves, tomato slices, red onion slices, and pickles on top of the cheese.

7. Spread mustard and ketchup on the top half of the bun and place it on top to complete the burger.
